Whoever likes trail mix will need to bake these tasty treats. These cookies have a different taste in every bite because of the trail mix which is packed full of goodness. Take them on trips instead of trail mix and they will give some added energy.
Trail Mix Cookies
1 cup butter softened
1 cup brown sugar packed
3/4 cup granulated sugar
1/4 cup of molasses
2 eggs
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp nutmeg
1 cup white flour
1 /2 cup wheat flour
1/4 cup flax meal
2 1/2 cups oatmeal
1 cup coconut
2 cups of trail mix
Directions:
Step 1: In large mixing bowl beat butter and sugars together, then add eggs, molasses, and vanilla and beat until mix throughly.
Step 2: Add flours, flax, salt and soda stir until blended. Mix in oatmeal then coconut and trail mix.
Step 3: Bake at 350 degrees on un-greased cookie sheet, 12 to a sheet evenly spaced for about 11-12 minutes.
Makes 4 dozen large cookies.
