I have to say ginger cookies are were not one of my favorite cookies in the past until… my friend Maria introduced me to her delicious recipe. These are flavorful, soft and chewy cookies rolled in large crystal sugar and then to kick them up a notch, cream cheese frosting smothered in between them. These are the perfect cookies for gift giving during the holidays because of the warm spices. The recipe for these cookies is versatile, whole wheat flour can be substituted for half the flour still giving a wonderful texture and flavor to them. I also like to use flax meal in my baked goods to cut down on cholesterol, add healthy omega fats and fiber, if your like me then this would be a great recipe to tweak to your liking. Enjoy making, eating and or giving these delicious cookies to your family and friends.
Soft Ginger Cookies {filled with cream cheese frosting}
1 1/2 cup shortening
1 cup butter
3 cups sugar
3 eggs
3/4 cup molasses
6 cups flour
4 1/2 tsp. baking soda
4 tsp. ginger
3 tsp. cinnamon
1 1/2 tsp. salt
Directions:
Step 1: Cream butter and shortening together with the sugar.
Step 2: Add eggs one at a time then add molasses and stir well.
Step 3: In a separate bowl mix all the dry ingredients together.
Step 4: Slowly add the dry ingredients to the wet until both are mixed together well.
Step 5: Cover the dough and refrigerate for about an hour.
Step 6: Roll dough into small 1 inch balls then roll in sugar. Place 12 balls on baking sheet and bake at 350 degrees for 8-10 minutes. When the timer goes off take out and let cool in pan for 5 min. then take off and cool completely.
Frosting Ingredients:
4 ounces of cream cheese softened
1 stick of room temperature butter
3 to 3 1/2 cups of powdered sugar
1/2 tsp. vanilla
1 to 2 tablespoons of milk
Directions:
Step 1: With and electric mixer cream together the room temperature butter and cream cheese, then add vanilla.
Step 2: Add one cup of sugar at a time to the butter cream cheese mixture, when it get a little to dry to mix add the milk. Mix on high until the frosting is fluffy.
Step 3: Spread frosting on the bottom side of one cookie, now sandwich the frosting by adding another cookie.
Bakers Notes: The frosting recipe is for a half batch of cookies.

I love ginger cookies, ginger cakes and pretty much anything with ginger except gingerbread LOL

Good question I should have figured that out, it is a lot about 72 cookies. When I made them this last time I halved the recipe.
