Tacos have to be one of my favorite meals and since I’m not a big beef eater I usually make chicken, turkey, fish or sometimes veggie tacos too. Not only are tacos tasty but generally they are fast to put together and I almost always have the ingredients on hand. So I hope you enjoy these tacos and feel free to just make this recipe into a taco salad if you don’t have tortillas because it’s just as good.
First, you will need to make the cilantro lime honey dressing recipe. Then marinate the chicken for about 4 hours in the refrigerator. I used boneless skinless chicken breast portions that are about 5 oz. each, they are not as thick as the whole breast and cook quickly on the grill but you can use the bone in chicken. When marinating the chicken I find it helpful to prick the chicken with a fork to help the marinade flavor the meat. It’s easy clean up to use a 1 gallon ziploc plastic bag for putting the chicken in with the marinade, then when ready to use just toss the bag away. When I grilled the chicken I slathered on BBQ sauce (use your favorite) toward the end of the cook time to give them a little more BBQ taste since I was going for a sweet and spicy on taste. I filled my flour tortillas with lettuce, tomato, avocado, cheese, cilantro, corn and black beans and when the grilled chicken was done I sliced it and added it on top. Finally, I drizzled more cilantro lime honey dressing on top of the chicken and some homemade salsa too. They were great tacos that I think you will make again and again.
Grilled Chicken Tacos with Cilantro Lime Honey Dressing
4- 5 oz. pieces of chicken
cilantro lime honey dressing
BBQ sauce (any type)
salsa (any type)
2 large tomatoes chopped
lettuce leaves washed and sliced thin
1 cup corn frozen thawed or canned
1 14 oz. can black beans drained and rinsed
1/2 cup green onions chopped
1-2 avocado sliced and chopped
1 1/2 cup of shredded cheddar cheese
sour cream (optional)
chopped cilantro leaves (optional)
8 fajita size flour or corn tortillas
Directions:
Step 1: Marinate chicken in about half of the dressing for at least 4 hours. Before marinating you might want to prick the chicken with a fork to let the marinade penetrate easily.
Step 2: Get all the taco ingredients ready for and set aside.
Step 3: Grill chicken on medium high heat until no longer pink when cut into or juices run clear.
Step 4: When chicken has cooled for about 5 minutes slice on the bias or fajita style.
Step 5: Put all the taco ingredients inside each tortilla and add sliced meat on top of each taco. Shake dressing and pour desired amount over taco filling then add a little salsa and sour cream if desired.
Serves: 4
