I can’t believe I haven’t posted a pancake recipe yet because we eat them at least once a week. I usually don’t make then from scratch because Krustz brand has a complete pancake mix which is pretty good, if you doctor it up a bit, which of course I usually do. I have to admit I made these when I was the only one home because I am not a morning person and my family starts the day out way to early for me to cook for them. I felt a bit guilty eating my photo shoot because they were so darn good and not a soul to share them with, but someone had too! Anyway, these pancakes are a weekend pleasure breakfast for sure, so try them out on your family this weekend.
Buttermilk Apple Pancakes
1 1/2 cup all purpose flour
1/3 cup brown sugar
2 T. wheat germ
1 T. cinnamon
1 T. baking powder
1/2 tsp. nutmeg
1/2 cup butter melted
2 eggs
1 cup buttermilk
1/3 cup of un-sweetened apple sauce
1 can of apple pie filling
Directions:
Step 1: Put all dry ingredients in a medium large bowl and set aside. In another bowl whisk together the melted butter, buttermilk, eggs, and applesauce. Add the wet ingredients to the dry and stir together. The batter will be thick.
Step 2: Drop desired amount (about 1/3 cup) onto hot skillet that has been greased with butter or cooking spray.
Step 3: Cook about a minute or two until the top of the pancake is setting up and bubbles begin to break. Flip cake over and cook another 2 min. or so.
Step 4: Open a can of apple pie filling into a small bowl and put a pat of butter in with it and a sprinkling of cinnamon and sugar. Microwave on high for 1 1/2 min. and stir.
Step 5: When pancakes are done put a heaping tablespoon of apple pie filling on top, then add maple syrup to your liking. A sprinkling of nuts on top would be great too, enjoy 😉

Yes is the future wife is a breakfast girl you must start to become more of a breakfast guy. Breakfast is my favorite meal…go figure.
